Oatmeal Raisin Cranberry Cookies

Oatmeal Raisin Cranberry Cookies

(makes about 4 dozen)
You'll need... 2 sticks (or one cup) of margarine, 1 cup of firmly packed brown sugar, 1/2 cup granulated sugar, 2 eggs, 1 tsp vnilla, 1 1/2 cups flour, 1 tsp cinnamon, 1 tsp baking soda, 1/2 tsp salt (optional), 3 cups of Quaker Oats (old-fashioned or the quick variety), 1 cup raisins and dried cranberries.

Heat oven to 350 degrees; beat together the margarine & sugars until creamy; add eggs & vanilla and beat well; add combined flour, baking soda, cinnamon & salt; mix well. Stir in oats, raisins/cranberries; mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10-12 minutes or until golden brown. Cool one minute on the cookie sheet then transfer to a wire cooling rack.
